Carl Nielsen

The Carl Nielsen Cake is named after the composer who wrote “Fynsk Forår.” Meaning “Spring
time in Funen,” it is where the Head Confectioner sought his inspiration for the cake.

The Carl Nielsen cake consists of orange butter cream, orange truffle and an almond bottom. Encased with yellow marzipan and decorated with the treble clef in green.
