Lucky You

In September 2009, Ronnie Holmen won Gold in Denmark’s Young Confectioner’s Championship. In honour of the occasion, we introduced this cake that made an indelible impression on the judges.

Lucky You

A base of pumpkin meringue, mascarpone, caramelised and salted pumpkin seeds with a
chocolate mousse made of 65% cocoa. The cake is filled with raspberries, enrobed with
chocolate ganache and decorated with pumpkin seeds.
