These, with a nod to the present, we call them the modern.

  • Jødekager: cinnamon.
  • Specier: a simple classic, no added flavour.
  • Linsebrød: with pearl sugar and hazelnuts.
  • Marianekager: roasted hazelnuts.

The modern

  • Ingefærsmåkager: ginger and walnuts
  • Kenya: coffee and chocolate
  • Københavner-småkage: cardamom and local honey.

Butter cookies may be small in size, but their history is rich and full of sweet moments. Their origins trace back to the earliest ovens of the Middle Ages, when bakers would test the heat with a small spoonful of cake batter. These tiny trial bakes – or biscuits – soon became irresistible treats in their own right.

In Denmark, butter cookie baking truly flourished in the 19th century, as butter and sugar became more widely available. Homemade butter cookies quickly earned their place at the table during holidays and cosy gatherings. Recipes were carefully handed down through generations – each family treasuring their own version of the spiced brunkage, delicate vaniljekrans, or the twisted klejne.

Today, butter cookies are no longer reserved for Christmas alone. They are a little everyday indulgence, capable of lifting the spirit with the crunch of each bite. Whether served with coffee or tucked into a charming tin, they remind us of the simple magic found in sharing something sweet.
Butter cookies are more than just baked goods – they are a taste of hygge and heritage, with a satisfying snap of tradition in every mouthful.
