Marianne Stagetorn Kolos has owned La Glace since 1989. But, she grew up on the floors of La Glace from the age of 11 when her mother, Merethe Stagetorn, bought the Conditori. Marianne Stagetorn Kolos first endeavored in business completing her education in Retail Business Economics in 1990. After, she pursued a practical education completing her confectioner apprenticeship at La Glace in 1993. A combination of her theoretical business knowledge and her practical education as a confectioner ensures that La Glace is run in the best way today.
Apprenticed as both a baker and confectioner, Lars Juul came to La Glace in 1996. Since 2003, he has been La Glace’s Head Baker/Confectioner. Lars Juul is a true professional and an inspired chef who has infused La Glace with his own character. He has the wonderful ability to see the big picture while adhering to his sense for detail.
Lars Juul’s signature at La Glace has been the introduction of French macaroons. Macaroons are known on every street corner in France, but until Lars Juul began making these small delicacies, they were relatively unknown in Denmark. Today, they have become one of the Conditori’s most celebrated specialties.

Malou Grønborg Nielsen came to La Glace in 1988. For the first 15 years, she was a Cake Lady. On May 1, 2003, she was named First Cake Lady. With this appointment, Malou Grønborg is responsible for the daily operations of La Glace. Along with administrative tasks, receiving orders and ordering supplies, she is also engaged in creative elements including decorating Cornucopias, window displays, daily quality control, service and cake requests.
Maria Stagetorn Kolos is the elder sister in the next generation of the Stagetorn Kolos family, who will take over the running of Conditori La Glace as of 8 October 2025. Born in 1995, she holds a higher education degree in International Business and Marketing. She has also spent two and a half years in London, where she gained valuable experience with corporate strategies and operations, specialising particularly in personnel development. Most recently, on 8 October 2024, she earned her qualification as a pastry chef following three dedicated years as an apprentice alongside her sister Laura, with whom she will lead La Glace into the future.
In her daily work, Maria is responsible for staff scheduling, employee development, and ensuring the smooth and modern operation of our online gift shop. In addition to many administrative tasks, she remains a warm and joyful presence on the shop floor, never without her infectious energy. Laura Stagetorn Kolos-Lauritsen is the younger sister in the next generation of the Stagetorn Kolos family, who will also assume leadership of Conditori La Glace as of 8 October 2025. Born in 1998, she holds a higher education degree in Business Economics. As part of her studies, she spent time on exchange in Australia and also experienced a very different reality during six months of volunteer work at a children’s home in Togo. On 8 October 2024, Laura too earned her qualification as a pastry chef, after three years of apprenticeship alongside her sister Maria, with whom she will jointly steer La Glace.
In her day-to-day work, Laura focuses primarily on accounts, bookkeeping, logistics, and technology, while also contributing to the efficient and consistent operation of the shop. Like her sister, she too participates in the Tour de Sportskage and co-hosts the historical talks on cake in generations with Marianne Stagetorn Kolos.
