La Glace has since the beginning produced Danish pastry to all the Danes. In our standard selection you can choose between cinnamon swirl, a classic with vanilla custard filling, cardamom spinners and Kringle (another Danish classic with vanilla custard cream, marzipan and raisins).
We also offer a seasonal inspired pastry, that can be found behind the counter in the confectionary.

The story of Danish pastry begins in the 1840s Copenhagen. At that time, Danish journeyman bakers went on strike, leaving the bakery masters in search of skilled hands elsewhere. They turned to Austria, importing bakers who brought with them the technique of Plunderteig – a laminated dough enriched with butter, which quickly captivated local hearts and palates.
But the Danes, ever inventive, couldn’t resist enhancing the recipe. Where the Austrians favoured simplicity, we added rich fillings – custard, almond paste and fruit preserves. The result? A crispy, sweet, and airy classic, which we proudly named wienerbrød – a nod to its Viennese roots.
Today, this beloved pastry is a Danish signature, know the world over simply as a “Danish”. Yet whatever its name or setting, it remains a gentle reminder of the art of taking one’s time – to fold the dough, savour the aroma, and share the joy.
